Also known as Weakfish this small fish is caught not too far off-shore in shallow water, and inshore estuaries. It is a favorite delicacy in many coastal communities and a preferred species for cajun cuisine. Technically this species is really part of the drum family (Sciaenidae) (not the trout family).
Overall speckled trout is a smaller fish and the common sizes are 1-2lb and 2-4lb making it ideal for natural cut fillets. Most of Beacon’s Speckled Trout is sourced from the Yucatan Peninsula in Mexico, and their seasonal production is typically available only during the winter and spring months.
